Teochew porridge, deeply rooted in Singapore’s humble beginnings, was a daily staple for those living along the riverbanks – a symbol of resilience, comfort, and community. Today, these same comforting flavours are being lovingly reimagined by the hotel’s Executive Chef Anthony. Affectionately known as “Ah Pui,” an endearing nickname reflecting his warm personality and generous spirit, Chef Anthony brings over a decade of culinary expertise to this new venture.
With a strong background in both Japanese and Singaporean cuisine, Chef Anthony is renowned for his refined techniques and bold flavours. His vision for the Ah Pui Teochew Porridge Buffet is simple: to rekindle the warmth of home-cooked fare that defined everyday life in Singapore’s early years.
A Feast of Authentic Flavours
Guests can look forward to classic porridge options like Sweet Potato Porridge and Plain Teochew Porridge. These are perfectly complemented by an impressive spread of over 20 heritage dishes and condiments. Highlights include savoury Braised Pork Belly, delicate Teochew-style Steamed Seabass Fillet, and unique Deep Fried Fermented Pork. Essential condiments like Salted Egg, flavourful XO Shrimp Sauce, and authentic Teochew Bean Paste will also be available to complete the experience.
To round off the meal, traditional sweet treats await, such as comforting Warm Soy-bean with Glutinous Rice Ball, a vibrant assortment of Nyonya Kueh, and classic Swiss Rolls.
